Do I now have the knowledge to set up Unix networks for big companies?

Much, much more knowledge is needed. They need things like failover and performance monitoring. You may be able to set up individual machines, but until you have some experience working on machines in that kind of environment, you're not ready to set it up in the first place. (Think about it, how can you set it up if you don't even know what it's supposed to look like?)
